Easy Sesame Chicken

Tender chicken thighs coated in a sweet, savory, tangy sesame sauce, served over jasmine rice.

Ingredients

Sauce

  • ¼ cup soy sauce
  • 2 tablespoons water
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 garlic cloves, minced
  • ½ tablespoon cornstarch
  • 1 tablespoon sesame seeds

Chicken and serving

  • 2 tablespoons cooking oil
  • 1 pound boneless, skinless chicken thighs
  • 1 large egg
  • 2 tablespoons cornstarch
  • Salt and black pepper
  • 4 cups cooked jasmine rice
  • 2 green onions, sliced

Instructions

  1. Stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, ginger, garlic, cornstarch, and sesame seeds. Set the sauce aside.
  2. Whisk the egg with the cornstarch, a pinch of salt, and pepper. Cut the chicken into roughly 1-inch pieces and toss them in the coating.
  3. Heat the oil in a large skillet over medium heat until very hot. Add the chicken in a single layer and cook with minimal stirring until browned and cooked through on both sides.
  4. Pour in the sauce and gently toss until it simmers and thickens around the chicken.
  5. Serve over jasmine rice with sliced green onions.
