Beef Chow Fun

Beef chow fun, also called beef ho fun, with bean sprouts, onion, and Chinese chives.

Ingredients

  • 140 g beef flank or skirt steak, thinly sliced
  • 1 teaspoon light soy sauce
  • 1 teaspoon Shaoxing rice wine
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • Pinch of sugar
  • 1 teaspoon cooking oil, for the marinade
  • 450 g fresh or dried sa-ho fun rice noodles
  • 2 tablespoons cooking oil, for the wok
  • 60 g bean sprouts
  • ¼ onion, sliced
  • 30 g Chinese chives, cut into pieces
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce

Instructions

  1. Toss the beef with the light soy sauce, rice wine, cornstarch, water, sugar, and 1 teaspoon oil. Marinate for 15 minutes.
  2. Prepare the noodles according to their package directions. Separate them gently so they do not break.
  3. Heat a wok until very hot. Add oil and sear the beef until just cooked on the outside. Transfer it to a plate.
  4. Add the noodles and stir-fry until heated through. Add the bean sprouts and onion and toss for about 30 seconds.
  5. Return the beef to the wok. Add the chives and both soy sauces, tossing until everything is coated and hot, about 30 seconds.
