Beef Chow Fun
Beef chow fun, also called beef ho fun, with bean sprouts, onion, and Chinese chives.
Ingredients
- 140 g beef flank or skirt steak, thinly sliced
- 1 teaspoon light soy sauce
- 1 teaspoon Shaoxing rice wine
- 1 teaspoon cornstarch
- 1 tablespoon water
- Pinch of sugar
- 1 teaspoon cooking oil, for the marinade
- 450 g fresh or dried sa-ho fun rice noodles
- 2 tablespoons cooking oil, for the wok
- 60 g bean sprouts
- ¼ onion, sliced
- 30 g Chinese chives, cut into pieces
- 1 tablespoon dark soy sauce
- 1 tablespoon light soy sauce
Instructions
- Toss the beef with the light soy sauce, rice wine, cornstarch, water, sugar, and 1 teaspoon oil. Marinate for 15 minutes.
- Prepare the noodles according to their package directions. Separate them gently so they do not break.
- Heat a wok until very hot. Add oil and sear the beef until just cooked on the outside. Transfer it to a plate.
- Add the noodles and stir-fry until heated through. Add the bean sprouts and onion and toss for about 30 seconds.
- Return the beef to the wok. Add the chives and both soy sauces, tossing until everything is coated and hot, about 30 seconds.
