Beef Flautas Supreme
Baked, crispy beef flautas with Mexican cheese, pico de gallo, and lime crema.
Ingredients
- 6 flour tortillas
- 10 oz ground beef
- 1 yellow onion
- 1 tablespoon Southwest Spice Blend
- 1 packet Tex-Mex paste
- ½ cup Mexican cheese blend
- 1 Roma tomato
- 1 lime
- 4 tablespoons sour cream
- Olive oil
- Cooking oil
- Salt and black pepper
Instructions
- Heat the oven to 425°F. Line a baking sheet with foil and brush it with oil or spray it with nonstick spray. Halve, peel, and thinly slice the onion; mince a few slices until you have 1 tablespoon.
- Heat a drizzle of oil in a large pan over medium-high heat. Add the sliced onion and cook for 3 minutes. Add the beef and Southwest Spice Blend; cook, breaking it up, until browned and the onion is softened, 4–6 minutes. Stir in the Tex-Mex paste and ⅓ cup water (½ cup for 4 servings). Simmer until thickened and the beef is cooked through, 2–4 minutes. Turn off the heat.
- Drizzle the tortillas with 1 tablespoon olive oil (2 tablespoons for 4 servings), rubbing to coat. Add a heaping ¼ cup beef filling to one side of each tortilla and sprinkle with 1 tablespoon cheese. Roll tightly into flautas and place seam-side down on the baking sheet.
- Bake until golden brown and crisp, 8–12 minutes. Meanwhile, finely dice the tomato. Combine it with the minced onion, half the lime zest, a squeeze of lime juice, and salt for the pico. In a separate bowl, combine the sour cream, remaining lime zest, and a squeeze of lime juice. Add water a teaspoon at a time until drizzly; season with salt.
- Divide the flautas between plates and top with pico de gallo and lime crema. Serve.
