Blackberry Cobbler

A buttery cobbler with batter that rises around the blackberries as it bakes.

Ingredients

  • 1 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup whole milk
  • 1 tablespoon baking powder
  • ⅓ teaspoon salt
  • 4 cups fresh blackberries
  • ½ cup granulated sugar, for the berries
  • Vanilla ice cream, for serving

Instructions

  1. Heat the oven to 350°F. Pour the butter into a 9×13-inch baking dish and place it in the oven while it preheats. Let the butter melt completely, then remove the dish.
  2. Whisk together the flour, sugar, milk, baking powder, and salt until smooth. Pour the batter directly over the melted butter; do not stir.
  3. Toss the blackberries with the remaining sugar, then scatter them evenly over the batter. Do not stir.
  4. Bake for 45–50 minutes, until the top is golden brown and the edges are set. The center may look slightly soft but will firm as it cools.
  5. Let the cobbler rest for 10 minutes. Serve warm with vanilla ice cream.

Notes

  • The batter rises up around the berries on its own—no layering or fussing required.
  • Do not stir after adding the batter or berries; leaving everything undisturbed creates the layers.
  • Frozen berries work well and do not need to be thawed.
