Dad's Chili
Dad’s beef-and-bean chili made with hamburger, diced stew meat, several peppers, and Brooks seasoning and beans.
Ingredients
- 1 pound hamburger
- 1 pound stew meat, diced
- Garlic powder
- Onion powder
- Black pepper
- Celery salt
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- ½ green bell pepper, chopped
- Bacon grease or olive oil
- 1 package Brooks mild chili seasoning mix
- 1 package Brooks original chili seasoning mix
- Water, as needed
- 1 can tomato sauce
- 1 can tomato paste
- 1 can Brooks chili hot beans
- 2 cans Brooks chili mild beans
Instructions
- Brown the hamburger and stew meat with garlic powder, onion powder, black pepper, and celery salt. Do not add salt yet. Drain and set the meat aside.
- Sauté the onion and peppers in bacon grease or olive oil. Add salt once the vegetables are in the pan, and cook until soft.
- Add the meat and both seasoning packets. Add enough water to thin the chili as it comes to a boil.
- Stir in the tomato sauce, tomato paste, hot beans, and mild beans. Simmer until the flavors blend, adding water as needed.
Notes
- The handwritten note says the original version may be too spicy. For a milder pot, use two packages of mild seasoning and ½ package of original seasoning, with a little more water.
