Ultra-Thin Pizza with Homemade Dough

A crisp, ultra-thin pizza built on homemade dough, a restrained layer of sauce, and light toppings.

A finished serving of Ultra-Thin Pizza with Homemade Dough

Ingredients

  • 1 lb homemade pizza dough (see Homemade Pizza Dough)
  • 2–3 tablespoons pizza sauce
  • Light toppings of choice

Instructions

  1. Let the dough warm at room temperature for 60–90 minutes.
  2. Preheat a pizza steel or stone at 500–550°F.
  3. Roll the dough to about ⅛ inch thick or thinner, then dock it.
  4. Add 2–3 tablespoons of sauce and very light toppings.
  5. Bake for 6–9 minutes.

Notes

  • The thin crust and light topping load are the point: too much sauce or topping will soften the crisp base.
  • Optional: par-bake the crust for 2–3 minutes before topping.
  • Optional: finish the pizza directly on the oven rack for 1–2 minutes.
