Crispy Oven-Baked French Fries
Golden potatoes baked at high heat for maximum crispiness.
Ingredients
- 2 pounds golden potatoes, cut into fries and dried thoroughly
- 3 tablespoons olive oil
- 1 teaspoon salt, plus more if needed
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon cornstarch, optional for extra crunch
Instructions
- Heat the oven to 425°F. If using a wire rack, place it on a sheet pan.
- Toss the dried potatoes with the olive oil, salt, pepper, garlic powder, smoked paprika, and cornstarch, if using. Coat every piece well.
- Spread the fries in a single layer on the sheet pan or rack, leaving space between them so they roast instead of steam.
- Bake for 20–25 minutes, until the bottoms begin to turn golden.
- Flip the fries and bake for another 15–20 minutes, until golden and crisp all over. Check smaller pieces early, since they may finish first.
- Let the fries rest on the pan for 2–3 minutes. Season with more salt if needed and serve immediately.
Notes
- Optional additions include onion powder, a pinch of cayenne, or dried parsley sprinkled on at the end.
- A wire rack improves airflow underneath and helps the fries crisp evenly.
