Crispy Oven-Baked French Fries

Golden potatoes baked at high heat for maximum crispiness.

Ingredients

  • 2 pounds golden potatoes, cut into fries and dried thoroughly
  • 3 tablespoons olive oil
  • 1 teaspoon salt, plus more if needed
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cornstarch, optional for extra crunch

Instructions

  1. Heat the oven to 425°F. If using a wire rack, place it on a sheet pan.
  2. Toss the dried potatoes with the olive oil, salt, pepper, garlic powder, smoked paprika, and cornstarch, if using. Coat every piece well.
  3. Spread the fries in a single layer on the sheet pan or rack, leaving space between them so they roast instead of steam.
  4. Bake for 20–25 minutes, until the bottoms begin to turn golden.
  5. Flip the fries and bake for another 15–20 minutes, until golden and crisp all over. Check smaller pieces early, since they may finish first.
  6. Let the fries rest on the pan for 2–3 minutes. Season with more salt if needed and serve immediately.

Notes

  • Optional additions include onion powder, a pinch of cayenne, or dried parsley sprinkled on at the end.
  • A wire rack improves airflow underneath and helps the fries crisp evenly.
