Maple Aioli for Sweet Potato Fries
A quick maple-garlic aioli with enough tang to balance sweet potato fries.
Ingredients
- ½ cup mayonnaise
- 2 tablespoons maple syrup
- 1 garlic clove, grated or minced
- 1 teaspoon lemon juice or apple cider vinegar
- ⅛ teaspoon smoked paprika or cayenne, optional
- ⅛ teaspoon salt
Instructions
- Whisk together the mayonnaise, maple syrup, garlic, and lemon juice or vinegar until smooth.
- Stir in the smoked paprika or cayenne, if using, and the salt. Taste and adjust; it should be sweet first, followed by tang and a savory garlic finish.
- Let the aioli rest for at least 10 minutes before serving so the garlic mellows and the flavors settle.
Notes
- If it tastes too sweet, add a little more lemon juice or vinegar.
- If it is too thin, whisk in another spoonful of mayonnaise.
- Add a little more maple syrup if the sweet potato fries are not heavily seasoned.
