Maple Aioli for Sweet Potato Fries

A quick maple-garlic aioli with enough tang to balance sweet potato fries.

Ingredients

  • ½ cup mayonnaise
  • 2 tablespoons maple syrup
  • 1 garlic clove, grated or minced
  • 1 teaspoon lemon juice or apple cider vinegar
  • ⅛ teaspoon smoked paprika or cayenne, optional
  • ⅛ teaspoon salt

Instructions

  1. Whisk together the mayonnaise, maple syrup, garlic, and lemon juice or vinegar until smooth.
  2. Stir in the smoked paprika or cayenne, if using, and the salt. Taste and adjust; it should be sweet first, followed by tang and a savory garlic finish.
  3. Let the aioli rest for at least 10 minutes before serving so the garlic mellows and the flavors settle.

Notes

  • If it tastes too sweet, add a little more lemon juice or vinegar.
  • If it is too thin, whisk in another spoonful of mayonnaise.
  • Add a little more maple syrup if the sweet potato fries are not heavily seasoned.
