Golden beer-battered catfish nuggets with lemon and tartar sauce

Ingredients

  • 16 oz catfish nuggets
  • ½ cup all-purpose flour
  • 3 tablespoons + ½ teaspoon cornstarch
  • 1 tablespoon + 1 teaspoon rice flour
  • ½ teaspoon kosher salt
  • ½ cup + 1½ tablespoons cold lager
  • Vegetable oil, for frying

Instructions

  1. Whisk together the all-purpose flour, cornstarch, rice flour, and kosher salt. Whisk in the cold lager until the batter is smooth and about as thin as pancake batter.
  2. Heat the vegetable oil to 375°F in a deep fryer or heavy pot.
  3. Dip the catfish nuggets in the batter, letting the excess drip back into the bowl. Fry in batches until crisp, golden brown, and cooked through, about 4–5 minutes.
  4. Drain the catfish nuggets on a wire rack or paper towels and serve hot.
