Blackened Grouper

Blackened grouper seasoned with smoked paprika, thyme, garlic, onion, and cayenne, with grilled lemons.

Ingredients

  • ¼ cup smoked paprika
  • 2 tablespoons dried thyme
  • 2 teaspoons onion powder
  • 1½ teaspoons kosher salt
  • 1½ teaspoons garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon dry mustard
  • ½ teaspoon ground red pepper
  • ½ cup butter, melted
  • 2 lb grouper fillets
  • 1 tablespoon olive oil
  • 3 lemons

Instructions

  1. Heat a grill to 400–450°F. Preheat a 12-inch cast-iron skillet on the grill for about 15 minutes.
  2. Combine the paprika, thyme, onion powder, salt, garlic powder, black pepper, mustard, and ground red pepper.
  3. Brush the grouper with melted butter and coat it with the seasoning mixture.
  4. Carefully add the olive oil to the hot skillet. Place in the grouper, cover, and cook for 3–4 minutes per side, until the fish flakes easily.
  5. Grill the lemon halves cut-side down for 3–4 minutes. Serve the grouper with the grilled lemons.
