Blackened Grouper
Blackened grouper seasoned with smoked paprika, thyme, garlic, onion, and cayenne, with grilled lemons.
Ingredients
- ¼ cup smoked paprika
- 2 tablespoons dried thyme
- 2 teaspoons onion powder
- 1½ teaspoons kosher salt
- 1½ teaspoons garlic powder
- 1 teaspoon black pepper
- ½ teaspoon dry mustard
- ½ teaspoon ground red pepper
- ½ cup butter, melted
- 2 lb grouper fillets
- 1 tablespoon olive oil
- 3 lemons
Instructions
- Heat a grill to 400–450°F. Preheat a 12-inch cast-iron skillet on the grill for about 15 minutes.
- Combine the paprika, thyme, onion powder, salt, garlic powder, black pepper, mustard, and ground red pepper.
- Brush the grouper with melted butter and coat it with the seasoning mixture.
- Carefully add the olive oil to the hot skillet. Place in the grouper, cover, and cook for 3–4 minutes per side, until the fish flakes easily.
- Grill the lemon halves cut-side down for 3–4 minutes. Serve the grouper with the grilled lemons.
